Ingredients
1 cup all-purpose flour
1/2 tsp salt
1/2 cup unsalted butter
4 oz. cream cheese (room temperature)
Method
In the mixer bowl with the pedal attachment mix all ingredients until small balls/crumbs form.
Transfer the dough into a work surface and form a ball. You can use the dough immediately, or freeze/store in the fridge until needed.
To use as quiche crust
On a floured surface, roll out the dough into a circle. Fit into a pie pan, and use the extra to form an edge. Use a fork to pierce the dough all over. Place in freezer for at least 15 minutes. place parchment paper on top of pie and use baking weights to prevent the bottom from rising.
Pre heat (convection) oven to 400 F.
Bake for 10 minutes. Remove weights. Return to the oven for 5 more minutes.
