Recipe: Cornbread Muffins

Ingredients

Dry ingredients
1 cup all-purpose flour
½ cup whole wheat flour
¾ cup cornmeal
½ tsp baking powder
¼ tsp salt

½ cup butter
1/3 cup white sugar
1/3 cup (golden) brown sugar
½ cup honey
2 eggs

½ cup milk

3/4 cup canned whole kernel corn (I use salted)

Directions:

Preheat oven to 400°F. Line 12 muffin pan with paper muffin liners OR butter pan well and dust with cocoa powder (this is really nice combo).

  1. Measure dry ingredients in a small bowl
  2. Using a Mixer with a flat beater cream butter and sugars until smooth.
  3. Add honey and mix until incorporated
  4. Add one egg at a time, and mix well
  5. Add dry ingredients, and milk to mixer. Mix only until mostly combined.
  6. using a spatula mix the corn kernel in.
  7. Place mixture in muffin tins, and bake for 22 minutes.
